Melt the butter in a saucepan and then fry the onion until tender. Transfer onions to a plate with a slotted spoon. Pour the butter in a saucepan. Blend for 4 minutes, then gradually and the Half & Half and keep beating the mixture. Stir in chicken stock and keep beating.

Lower the heat to low and add the carrots, onions and broccoli. Simmer the soup for 20 minutes,and then season with salt and pepper.
